Banana Pancakes:

 

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 2 ripe bananas, mashed
  • 2 tablespoons butter, melted
  • Maple syrup, for serving

Instructions:

  1. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the egg, milk, and mashed bananas.
  3. Pour the wet ingredients into the dry ingredients and whisk until just combined. Do not overmix.
  4. Heat a large skillet or griddle over medium heat. Grease the pan with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes per side, or until golden brown.
  6. Serve immediately with maple syrup.

Tips:

  • For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
  • If you want to add some extra flavor to your pancakes, you can add in some chocolate chips, nuts, or fruit.
  • You can also make your pancakes ahead of time and freeze them. To do this, cook the pancakes according to the directions and then let them cool completely. Once they are cool, stack them on a baking sheet and freeze. When you are ready to eat them, simply defrost them in the microwave or toaster oven.
